Sunset Paloma

A California twist on the classic Paloma — fresh grapefruit, a chili-salt rim, and a splash of blood orange for that golden-hour color.

Ingredients

  • Blanco tequila 2 oz
  • Fresh grapefruit juice 3 oz
  • Blood orange juice ½ oz
  • Agave syrup ½ oz
  • Lime juice, fresh ½ oz
  • Chili-salt rim + grapefruit wheel to garnish

Method

  1. Rim a tall glass with chili salt and fill with ice.
  2. Combine tequila, grapefruit juice, lime juice, and agave in a shaker with ice. Shake well.
  3. Strain into your prepared glass.
  4. Float the blood orange juice on top for the sunset effect — do not stir.
  5. Garnish with a grapefruit wheel and a lime wedge.

William's Tip: Use freshly squeezed grapefruit only — bottled juice kills this drink. A Tajín rim works perfectly in place of chili salt.

Perfect Margarita

The definitive margarita — the 2:1:1 ratio that William uses at every event. Simple, balanced, and endlessly refreshing.

Ingredients

  • Blanco tequila 2 oz
  • Fresh lime juice 1 oz
  • Triple sec or Cointreau 1 oz
  • Salt rim + lime wedge to garnish

Method

  1. Rim a rocks glass with kosher salt and fill with ice.
  2. Combine all ingredients in a shaker with plenty of ice.
  3. Shake hard for 12–15 seconds until very cold.
  4. Strain into your prepared glass over fresh ice.
  5. Garnish with a lime wedge.

William's Tip: Fresh lime juice is non-negotiable. Squeeze it the same day. For a spicy version, muddle 3 slices of jalapeño before shaking.

Espresso Martini

Rich, silky, and deeply caffeinated. William's go-to finale for dinner parties and late-night weddings — a crowd-stopper every time.

Ingredients

  • Vodka 2 oz
  • Kahlúa or coffee liqueur 1 oz
  • Fresh espresso, cooled 1 oz
  • Simple syrup ¼ oz
  • 3 coffee beans to garnish

Method

  1. Pull a fresh espresso shot and let it cool slightly (2–3 minutes).
  2. Add all ingredients to a shaker with ice.
  3. Shake vigorously for 15–20 seconds — the foam comes from the shake, so make it count.
  4. Double strain through a fine mesh into a chilled coupe glass.
  5. Garnish with 3 coffee beans arranged in a triangle.

William's Tip: The foam is everything. Use fresh espresso (not cold brew), shake harder than you think you need to, and strain immediately.

Pacific Spritz

Light, floral, and perfectly suited to an afternoon on the coast. William's signature welcome drink for Santa Monica and Malibu events.

Ingredients

  • Aperol 2 oz
  • Prosecco 3 oz
  • Fresh cucumber juice 1 oz
  • Elderflower liqueur (St-Germain) ½ oz
  • Soda water splash
  • Cucumber ribbon + mint sprig to garnish

Method

  1. Fill a large wine glass with ice.
  2. Add Aperol, cucumber juice, and elderflower liqueur.
  3. Top with Prosecco and a splash of soda.
  4. Stir gently once — just to combine.
  5. Garnish with a cucumber ribbon and fresh mint.

William's Tip: Run the cucumber through a juicer or blend and strain. For a shortcut, use a few muddled slices in a shaker — strain the juice out before building.

Desert Rose Mocktail

A stunning zero-proof drink inspired by Palm Springs sunsets — hibiscus, citrus, and a ginger kick that makes it anything but boring.

Ingredients

  • Hibiscus tea, cooled 3 oz
  • Fresh lemon juice ¾ oz
  • Honey syrup (1:1) ½ oz
  • Fresh ginger juice ¼ oz
  • Sparkling water 2 oz
  • Dried rose petals + lemon wheel to garnish

Method

  1. Brew a strong hibiscus tea and allow to cool completely.
  2. Combine tea, lemon juice, honey syrup, and ginger juice in a shaker with ice.
  3. Shake well and strain into a rocks glass over fresh ice.
  4. Top with sparkling water and stir gently.
  5. Garnish with dried rose petals and a lemon wheel.

William's Tip: Make the hibiscus tea double-strength for a deeper color and bolder flavor. Ginger juice can be made by grating fresh ginger and pressing through a fine sieve.

Old Fashioned

The benchmark of any great bartender. William's version is clean and classic — no muddled fruit, no shortcuts, just whiskey done right.

Ingredients

  • Bourbon or rye whiskey 2 oz
  • Simple syrup ¼ oz
  • Angostura bitters 2 dashes
  • Orange bitters 1 dash
  • Large ice cube 1
  • Orange peel to garnish

Method

  1. Add simple syrup and bitters to a mixing glass.
  2. Add whiskey and fill with ice.
  3. Stir for 30 seconds — this drink is stirred, never shaken.
  4. Strain over a large single ice cube in a rocks glass.
  5. Express an orange peel over the glass, run it around the rim, and drop it in.

William's Tip: Use a 2:1 rich simple syrup (two parts sugar, one part water) and you only need half as much. A good-quality large ice cube melts slower and keeps the drink colder longer.

Cucumber Jalapeño Cooler

Ingredients

  • Cucumber, peeled & sliced 4 slices
  • Fresh jalapeño 2 thin slices
  • Fresh lime juice 1 oz
  • Agave syrup ½ oz
  • Fresh mint leaves 6
  • Sparkling water 4 oz
  • Cucumber slice + mint sprig to garnish

Method

  1. Muddle cucumber, jalapeño, and mint in a shaker — be thorough but not aggressive.
  2. Add lime juice and agave syrup. Fill with ice and shake well.
  3. Double-strain into a tall glass over fresh ice.
  4. Top with sparkling water and stir gently.
  5. Garnish with a cucumber slice and fresh mint sprig.

William's Tip: Remove jalapeño seeds for less heat, keep them for more. Taste as you muddle — you control the spice level at that step.

Chocolate Negroni

William's signature dessert cocktail — a classic Negroni made sultry with cacao bitters and a dark chocolate garnish. Perfect after dinner.

Ingredients

  • Gin 1 oz
  • Sweet vermouth 1 oz
  • Campari 1 oz
  • Cacao bitters 2 dashes
  • Dark chocolate square + orange peel to garnish

Method

  1. Combine gin, vermouth, Campari, and cacao bitters in a mixing glass with ice.
  2. Stir for 30 seconds until well chilled.
  3. Strain into a rocks glass over a large ice cube.
  4. Express an orange peel over the glass and rest it on the rim.
  5. Garnish with a square of 70%+ dark chocolate on the rim.

William's Tip: Substitute mezcal for the gin to add a smoky depth. Fee Brothers Aztec Chocolate Bitters or Scrappy's Chocolate Bitters both work beautifully here.

SoCal Mule

A California take on the Moscow Mule — swapping vodka for blanco tequila and adding a splash of prickly pear for that unmistakable SoCal color.

Ingredients

  • Blanco tequila 2 oz
  • Prickly pear syrup ½ oz
  • Fresh lime juice ¾ oz
  • Ginger beer 4 oz
  • Lime wheel + candied ginger to garnish

Method

  1. Fill a copper mule mug (or tall glass) with crushed ice.
  2. Add tequila, prickly pear syrup, and lime juice.
  3. Top with ginger beer and stir once to combine.
  4. Garnish with a lime wheel and a piece of candied ginger.

William's Tip: Prickly pear syrup can be found at most Mexican grocery stores or made by simmering diced prickly pear fruit with equal parts sugar and water. Fever-Tree Ginger Beer is William's preferred brand for events.
